Mitchell is originally from Sinton, Texas. He attended high school at Sinton High School, where he led the Pirates to a 2022 UIL Class 4A State Championship.

Drafted by the Kansas City Royals in the 1st round of the 2023 MLB Draft, Mitchell was touted as the top high school catching prospect ahead of the 2023 draft. His performances backed it up, as he went on to be a two-time gatorade player of the year in Texas, and participated in just about every major prospect event possible. Most notably, he is a two-time participant on 18U Team USA.

Mitchell signed with Kansas City for $4.9 Million, and is currently one of MLB Pipeline's top 100 prospects. He is the #2 Prospect in the Royals' system. Mitchell missed the back half of 2025 spring training due to a broken hamate bone on his non-dominant hand.
